Strawberry Tiramisu

Ingredients
  

  • For the Strawberry Layer:
  • 1 lb fresh strawberries hulled and sliced
  • ½ cup sugar
  • 1 tbsp lemon juice
  • For the Mascarpone Cream:
  • 1 cup heavy cream
  • 8 oz mascarpone cheese
  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • For the Ladyfingers:
  • 1 ½ cups brewed coffee cooled OR strawberry juice
  • 24 ladyfingers
  • For Garnish Optional:
  • ½ cup white chocolate shavings
  • Extra strawberry slices

Instructions
 

  • Step 1: Prepare the Strawberries
  • In a bowl, toss sliced strawberries with sugar and lemon juice.
  • Let them sit for 10 minutes, allowing the juices to release and create a natural syrup.
  • Step 2: Make the Mascarpone Mixture
  • Using a hand mixer, beat heavy cream until soft peaks form.
  • Add mascarpone, powdered sugar, and vanilla extract, then continue beating until smooth and fluffy.
  • Step 3: Dip the Ladyfingers
  • Quickly dip each ladyfinger into the cooled coffee or strawberry juice—don’t soak them too long to prevent sogginess!
  • Step 4: Assemble the Tiramisu
  • Layer half of the dipped ladyfingers in the bottom of a 9x9-inch baking dish.
  • Spread half of the mascarpone cream over the ladyfingers.
  • Add half of the macerated strawberries on top.
  • Repeat the layering process with another set of ladyfingers, mascarpone cream, and strawberries.
  • Step 5: Chill & Serve
  • Cover and refrigerate for at least 4 hours (or overnight) to allow the flavors to meld.
  • Before serving, garnish with white chocolate shavings and extra strawberry slices for a beautiful finish.
