Crock Pot Ranch Chicken Sandwiches

Ingredients
  

  • For the Ranch Chicken:
  • 1.5 lbs boneless skinless chicken breasts
  • 1 tbsp olive oil
  • 1 packet or 2 tbsp ranch seasoning mix
  • ½ cup chicken broth
  • 1 cup ranch dressing
  • 16 oz cream cheese cubed
  • For the Add-Ins:
  • 2 cups cheddar cheese shredded
  • 12 slices bacon cooked & crumbled
  • 4 scallions chopped
  • For the Sandwiches:
  • Brioche or hamburger buns
  • Lettuce tomatoes, pickles, or extra cheese (optional toppings)

Instructions
 

  • Step 1: Prep the Chicken
  • Place the chicken breasts in the crock pot.
  • Drizzle with olive oil and sprinkle the ranch seasoning mix evenly over the chicken.
  • Pour in chicken broth and ranch dressing for added moisture.
  • Step 2: Slow Cook
  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until the chicken is tender and easy to shred.
  • Step 3: Shred & Mix
  • Use two forks to shred the chicken directly in the crock pot.
  • Add in cubed cream cheese and stir until melted and creamy.
  • Mix in shredded cheddar cheese, crumbled bacon, and chopped scallions.
  • Step 4: Assemble the Sandwiches
  • Spoon the warm ranch chicken mixture onto soft buns.
  • Add optional toppings like lettuce, tomato, extra cheese, or pickles for extra crunch and freshness.
  • Step 5: Serve & Enjoy!
